Opened April 2011 by Mark and Debbie Burgess (a pilot and a nurse), Aviary Cafe and Creperie is a labor of love. Serving downtown’s working core, residents, and visitors a quality food experience, Aviary brings something fresh and lovable to Springfield’s dining scene: deep integrity, big heart, and affordability. Aviary’s menu features savory and sweet Breton crepes, as well as traditional bistro fare, beautifully paired with wine or spirits. The “made from scratch” menu changes regularly, based on seasonal variations and the kitchen crew’s inspiration. Mark and Debbie, along with Chef John Allen, have created an environment that says, “Sit, eat, pass this to your friend..!” Aviary is Springfield’s only creperie and a perfect gathering spot – for fun and delicious food, inspired conversation, music and art, for groups and individuals of every age and spirit.
