Since 2007, The Coffee Ethic has been committed to uncompromising quality and ethical business practice. It’s mantra is simple. “Cup. People. Earth.”
Single-origin coffees are roasted in-house, highlighting the flavor of the beans. Owner Tom Billionis says you can even taste the farmer’s work.
Once you step foot inside the café, it’s no surprise Business Insider listed The Coffee Ethic as Missouri’s best coffee shop.
It goes beyond the “mind-blowing” Cappuccinos, delicious baked goods, and a finely curated beer list — Billionis selects taps on flavor on regional scarcity.
There are tables and window bar surfaces created from salvaged Walnut; local art is scattered across the walls. An exterior patio faces the square with plant boxes green and lush. A newly installed bike rack at the south entrance allows actively commuting patrons security and convenience.

As boasted on The Coffee Ethic’s website, the Cappuccino will blow your mind, but today’s mid-July heat neared triple digits. Something on ice was mandatory and the latté is one of the best around. The double shot of espresso was perfect to carry through the afternoon’s workload.
The chocolate brownie did not shy on rich flavor and provided a perfect afternoon snack before that afternoon meeting. Neither the brownie or the latté lasted too long.
